Soil Minerality
Usually the agave regions are divided in two, the Highlands and the Lowlands. However, Amatitán belongs to a unique third region: the Valley. Nestled at the perfect elevation, its climate and deep red soil—enriched by remnants of a volcano—create an ideal environment for growing agave. Infused with volcanic minerals, this land is where nature and history converge to shape the character of our agave.
Water Source
Our water source lies deep beneath the earth, 220 meters below the surface. Crystal-clear and mineral-rich, this water is a gift from the land. Integral to our craft, it imbues our tequila with nature’s purity during the production process.


Fermentation Process
Our open fermentation process relies solely on the natural yeast in the environment, preserving the authentic flavors of our premium agaves. This traditional process lets nature shape a tequila that’s pure, vibrant, and true to its roots.
Cooking
Our agaves are cooked for about 40 to 45 hours, and each agave is halved to allow the heat to penetrate the piña, unfolding the sugars within. When cut in half, we also remove the cogollo, the leaves that grow in the top center of the piña. These leaves, with their bitter notes and lack of sweetness, are left behind, ensuring only the purest essence of the agave is brought to life in every batch of our tequila.

Age and Distillation
Our reposados are aged four to six months and añejo 15 to 18 months, though timing varies to achieve the ideal sensory profile by blending batches of different ages. Distilled with care, our tequila undergoes two distillations in stainless steel stills with copper coils, plus a third for refinement. The copper removes impurities and enhances character, creating a tequila that is pure, vibrant, and meticulously crafted.
